By alternating between shaking green and standing, the tea leaves undergo complex biochemical changes, forming the unique "green leaves with red edges" appearance and complex and changeable aroma of oolong tea.
Oolong tea has a dark color and tight strips. After brewing, the tea soup is clear and bright, and the aroma is high and long-lasting. It has both the freshness of green tea and the mellowness of black tea. The taste is rich and varied. Some have floral and fruity aromas, while others show the ripe aroma of charcoal roasting or the mineral aroma of rocks, which is endless.
