Historical background
Origin: Lapsang Souchong Black Tea Subspecies was first established in Tongmu area of Wuyishan City, Fujian Province, which has a history of more than 400 years. According to legend, in the middle and late Ming Dynasty, local tea farmers created this black tea by chance.
Communication: Lapsang Souchong Black Tea seed was exported to Europe in the early 17th century, and was selected as royal black tea by the Royal Family of England at that time, and thus induced the famous "afternoon tea" fashion.
Origin and raw materials
Origin: The origin of Lapsang Souchong Black Tea is in Tongmu village, southwest of Huanggang Mountain, the main peak of Wuyi Mountains. Nowadays, Lapsang Souchong Black Tea produced in the alpine tea garden in the junction area of Wuyishan City, Jianyang City and Guangze County are all called "Zhengshan Xiaochong".
The area of production area protection is initially defined as 117°38 '6 "117°44' 30" east longitude, 27°41 '35 "27°49' 00" north latitude, covering an area of 565 square kilometers.
Raw materials: The raw materials used in Lapsang Souchong are vegetable tea in the protected area, and the annual output is not high, about 1000 kg.
Quality characteristics
Appearance: Lapsang Souchong Black Tea is strong and tight, black and oily in color, red and thick after soaking in water, high and long aroma with pine smoke, mellow taste, with longan soup flavor. Production technology
Traditional process: Traditional smoked Lapsang souchong is smoked by pine wood in the process of wilting and baking, so it has a unique pine smoke aroma.
New process: In order to meet the taste needs of young tea friends, there has also been a new process of smokeless varieties, that is, Lapsang Souchong small species without pine needles or pine wood smoking, partial fruit flavor.
Tasting method
Choose tea: Choose a complete shape, bright color tea, more gold bud tea is usually higher quality.
Brewing: Use tea pot, tea cup and other brewing tools, high water temperature (about 95°C), can fully release the aroma of tea. Generally use 3-5 grams of tea per 100 ml of water. The initial soaking is about 20-30 seconds, and the subsequent soaking time is gradually extended.
Taste: When tasting, you can first appreciate the aroma of the tea, and then try the taste, and realize the layer and aftertaste of the tea. Zhengshan Xiaochong tea is suitable for multiple brewing, with the increase of brewing times, the characteristics of the tea soup will also change, and the taste will be more mellow.
